Zawngtah Singju (Malta Meh)

Ingredients
Zawngtah / (parkia roxburghii)
Sap Malta keu / Dry King Chili/Ghost Chili
Ngathu / Fermented Fish
Sipi / Perilla Seeds
Besan / Chick Pea Powder
Aithanglou / Chameleon Plant
Methi teh / Fenugreek Leaves
Chi / Salt

First scrapped off the green cover of zawngtah and removed/trimmed the sides of the bean as well. Now cut the bean finely. Boil water and pour it into the cut pieces cover for 3/4 minutes and drain the water. Boil the dry king chili. Roast the fermented fish, grind them with the chili adding salt to taste. Roast perilla seeds and grind, roast the chick pea powder.Clean the Chameleon Plant and cut them finely. Clean the fenugreek leaves. Now mix all the above in a bowl. Hot and tasty Singju is ready.
