Chicken Noodle Soup to Beat the Cold Winter.
Its Winter and who doesn’t love a classic noodle soup? This Chicken Noodle Soup is perfect for the weather and will keep you warm from head to toes, and will filled you up.
Today lets make a noodle soup, its Simple and Easy to make.
Salt to taste
Sprinkle some salt over the chicken and rub on the skin to remove some bad poultry smell. Rinse well under running water and stuff 1 spring onion,lemon Grass and 2 slices of ginger into its cavity. This will enhance the flavor of the meat as it cooks.
For the Broth :: Put Chicken, garlic, and onion in a large stock pot and boil over high heat and constantly skim off the foam as soon as it rises to the top. After an hour of boiling, check if the chicken is cooked, by piercing through the chicken with a chopstick(or knife) and if there is no pink water coming out, its cooked, remove from the heat. Strain. Broth will be clear and a little bit milky… Rinse the chicken well under cold water to prevent the skin from darkening. Let it cool and debone. Slice the meat into bite-sized pieces or shred roughly with your fingers. Return the bones to the soup pot, and boil with little salt to taste. you can add fish sauce(optional) Collect the garlic into a small bowl and mash it with a spoon, and ground black pepper, and sesame oil, mix well.
For a non Spicy Version, take the shredded chicken and mix well with the garlic paste and set a side.
For the noodles :: Cook noodle following package instructions. Then rinse under cold water to stop the cooking process and remove the outside starch, and rinse again under hot water. ( This helps the noodles to get dried faster (hot water evaporates quicker) and become more fluffy rather than stick to each other and turn lumpy)
In a serving bowl, place a handful of noodle, top up with chicken, Pour in the soup, Garnish with more chopped spring onion/coriander to your wish. Add Hard boil Egg to your bowl (Optional)

(here, i used whole chicken but you you can use chicken breast or any part of chicken for the meat…)
